spicy vegan rissoles

1 can kidney beans, roughly mashed with a fork

half can baked beans

9 oz cornmeal

65 ml oil (plus extra for frying)

tbspn tomato puree

10g gia garlic

stock cube dissolved in 50ml hot water

1 large carrot grated

salt, ground black pepper, taspoon of garam masala

place all of the ingredients in a mixing bowl and squish with your hands until you have a paste but still with a few lumps of visible kidney beany bits.

allow to stand for 30 mins to an hour to allow the cornmeal to absorb the juices…

place heaped tablespoons of the mix into a heated frying pan with some oil, flattening each into a patty shape approx 1 cm thick as you do so. Flip after 2-3 mins gentle heat, cook the same on the other side.

serve with croatian potato salad and HM chutney, nomnomnom 🙂 :

the croatian potato salad is my interpretation of Allegras original. I used:

700g potato, quartered cubed and boiled with the skins on. Then allowed these to cool, before dressing with 4 dessertspoons of oil, 1 of vinegar and 1 medium onion chopped into very very thin rings (about 1-2 mm thick),

salt, ground black pepper and tossed until the potato fluffs at the edges and absorbs the dressing.
