summer pudding

keen fruit foragers may find this summer pudding a helpful thrifty meal

1/2 loaf of CFR bread thinly sliced

approx 1 kilo of foraged fruits

approx 400g sugar (add to taste depending on the sharpness of your fruits)

1) stew fruits until they are soft, in 200 ml of water and the sugar

2) slice the bread and arrange it like a bread and butter pudding (you can line a pudding basin the conventional way if you wish.)

3)pour the stewed fruits over the bread and leave to cool.

makes 12 servings, 2.5p per portion (assuming foraged fruits)
