risi e bisi (vegan version)

400g rice

900g frozen peas

80g sundried tomatoes snipped into thin strips

160g onion diced

65ml veg oil

7g garlic

vegetable stock

salt and pepper

half a teaspoon mustard powder

dessertspoon dried oregano

dessertspoon balsamic vinegar

  2. Thanks – just made this in the rice cooker. It is yummy – I wouldn’t have thought of adding the mustard and balsamic. Been lurking on MSE old style for a while and always enjoy your threads.
