Don’t forget the nutritional gem that is rosehip syrup. It has 20 times more vitamin C than oranges!
1 kilo rosehips, washed and chopped in your food processor
1.75 litres water
boil together for 15 mins then strain through a muslin or jelly bag. Put the strained juice back in a pan, add 750g sugar, and boil for just 2 mins til the sugar dissolves. Bottle or jar.

That sounds really easy, and a great source of vitamin c, but at the risk of sounding really dim, what do you do with it??? Is it a cordial, do you have it on pancakes, is it something more medicinal? Please help me out!

It is a cordial Andrea that can be used in many different ways. It is good as a drink with plain water, or sparkling, lovely drizzled on ice cream or pancakes, used to flavour a milkshake, an ingredient in smoothies, run around a plate as a sauce to posh up a dessert, or anything else that takes your fancy

It’s really important to strain them as they are full of fibres which get stuck in your throat.
